Street Style Egg Chicken Noodles
Sometimes it’s fine to take a break! Slip out of your heels, pamper yourself a little, sit back and let others take the charge, clear your mind, and wait to be served. Well these were clearly my thoughts while I was at work sometimes back. The festive pressure was getting the best of me. Late nights and less and less time with family, had become a regular thing. And in times like these, the onlything that my soul cravesforis my comfort food, noodles. My love for Chinese food is not new to my family, so to cheer up my spirit and give me a much needed break from the kitchen, I was ushered home to a delicious meal, theStreet Style Egg Chicken Noodles, by none other than, my husband, who claims to be a better chef than me, which by the way is true. So today I shall share the recipe of my comfort food, Street Style Egg Chicken Noodles that lifts my mood in no time and I am sure will be comforting for you as well.
  1. Let’s begin with chopping all the ingredients and preparing the sauce. Take a bowl, add tomato sauce, vinegar and soya sauce as per the measurement given above, mix it well with a spoon and leave it aside. Also it is always a better idea to marinate the chicken cubes for at least 10 minutes before you start cooking, as it takes less time to cook and is also tender in texture. Take a bowl, add the chicken cubes, sprinkle salt, 1tsp black pepper and ½ tsp vinegar, mix it well and leave it aside until required in the recipe.
  1. Take a pan, put the heat in medium flame, add three cups of water, a little salt and few drops of oil and let the water boil. Then add the noodles and cook it for about 3 minutes or until the noodles get soft. Be careful, the noodles shouldn’t be over cooked, so keep checking the softness at regular intervals. Once the noodle is done, empty the pan on a colander and add some cold water to the noodles, this avoids the noodles from getting sticky. Next add few drops of oil and mix the noodles well and leave it aside. Take a fresh pan, add vegetable oil, ginger, garlic, green chillies and sauté it well under medium heat. Then add the onion, cabbage, carrot and capsicum slices and fry for another 2 minutes, till the vegies turn soft. Now add the marinated chicken cubes, sprinkle some salt and mix it well with the other ingredients in the pan and let it cook for 3 minutes or until the chicken pieces are fried well. Now add the sauce you had prepared earlier and mix it well till the gravy thickens a little, now add the noodles, some black pepper, salt and mix the entire thing well. Make an egg poach, sprinkle a little salt and black pepper over it and carefully place it over the noodles, for a better look and feel. Your street style egg chicken noodle is ready to be served.
Recipe Notes

P.S – Always use a fork to finally mix the noodles with the ingredients in the pan. This avoids the noodles from breaking.
