So she decided to prepare something different as prawns are Anirban’s favourite. That evening Ridhima got home early from work and got all the ingredients together, ordered some fresh flowers, and lit up candles to set the mood. When Anirban was back from work, he was already very impressed to see the efforts put in my Ridhima, and then she brought out the evening’s special, “Prawn Rezala” and butter nuns. Both Ridhima and Anirban spent a quiet romantic dinner that night and the nights after. Take the freshly washed prawns in a bowl, add curd, grated onion and ginger garlic paste. Mix all the ingredients together and let it marinate for 3 to 4 hours.
Add half the butter in a wok and let it heat on medium flame. Shallow fry the prawns and keep it aside. Add the remaining butter to the wok, let it heat, then add the whole garam masala (cardamom, cinnamon & clove) now add all the remaining ingredients and keep stirring for 2 to 3 minutes until it leaves oil. Add sugar and salt as per taste. Now add the curd and stir again. Next add the fried prawns and cover the wok with a lid and let it cook on low flame for 10 minutes. In the meantime, add kesar to the milk, stir it well and add it to the gravy, next add the rose water and let it cook for some more time.
Take another frying pan, add the vegetable oil and let it heat on medium flame. Add the dry red chilies and onion rings, fry it well and keep it aside.
Put the prawn gravy on a serving tray, and garnish it with the red chilies and fried onion rings and serve it hot with butter nun, roti or even polao. Your Prawn Rezala is ready. Hope it is as much comforting for you and your family as it was Ridhima and Anirban.
