Boil milk in a pot and keep it aside, soak the Gobindobhog rice in water and leave it aside for 15 minutes.
Take a kadai, put it on medium flame, add 1tbsp ghee and let it melt. Add the bay leaves, cardamom and cashew nut and give it a quick stir. Now add the soaked Gobindobhog rice and shallow fry all the ingredients for a while. Add ½ cup water and close the lid, let the rice cook, until it is half done.
Add the rice to the warm milk, and continue cooking the same. Keep stirring in between. Now add the lal batasha and let it cook for 5 more minutes. Add the crushed nolen gur and keep stirring in frequent intervals, until the consistency of the milk gets thick and the rice is cooked well. When done, put off the flame and leave it to settle down. Pour the payesh in a bowl and garnish it with raisins and liquid nolen gur. Your Nolen Gurer Payesh is ready to be served, right in the comfort of your kitchen.
