Take the mutton pieces in a bowl, add the onion paste, curd, ginger garlic paste, a little bit of salt and mix it well with the mutton. Leave the mutton to marinate for an hour.
An hour later steam the mutton for 2 whistles and keep it aside.
Take a kadai, add mustard oil, sauté two cinnamon sticks, then add the chopped onions. Fry the onions until they turn soft and golden brown. Now add the green chilli paste, coriander powder and salt as per taste and fry all the masala well until it starts to leave oil.
Now add the strained steamed mutton and mix it well with all the ingredients, let it took for 2 minutes on medium flame. Now add the mustard paste and poppy seed paste to the mutton, give it a good stir and let it cook for some more time. Add 1 cup of the mutton stock to enrich the flavors and cook the masala well. Give it all a good stir and let it cook for 5 more minutes, don’t forget to keep stirring the content in between.
Now add the coconut milk, sprinkle a little sugar as per your taste, mix all the ingredients well and cover the lid. Let the mutton cook in low flame until it turns soft and tender, the gravy gets thick and all the malasa is cooked well.
When done, turn off the heat, garnish it with some fresh cream, gillian cut green chilies and ginger, sprinkle them on top and serve it with steamed rice or pulao. Your Mutton Malaikari is ready.
