Mutton Ghee Roast
Our country is not only divided into states, culture and languages but also food. And each region has their speciality. The locally grown spices add their magical flavour to the cuisine, which intern makes it unique. So today, I am about to share with you a very popular Mangalorean Mutton recipe, that is easy to cook and serves as awholesome comforting meal. Mutton Ghee Roast.

Preparation:
  1. Prepare the paste for the gravy – take a pan, put it on medium heat, add the red Kashmiri chilies, regular dry red chilies, coriander seeds, pepper corns, fennel seeds, cumin seeds, cinnamon stick, cloves and star anise. Roast the spices for a few minutes, until you get the pungent aroma of the spices. Next turn off the heat and transfer all the spices into a grinding cup, add a small cube of ginger, 2 cloves of garlic, lemon water and a little plain water, for a smooth paste. Once the paste is done we are ready to start with our cooking.
Directions:
  1. Take a pressure cooker, put it on medium flame, add 3tbsp of ghee and let it heat a little, then add 1tbsp of ginger paste,1tbsp of garlic paste, turmeric powder, and stir it well. Then add the mutton pieces,salt to taste and mix it well with the ghee and other ingredients and cook it for 4 minutes. Now add some water, enough to cover the mutton pieces. Cover the lid, put on the weight and cook it for 4 to 5 whistles on high flame, or until the mutton pieces turn tender and soft. Once the mutton is done, separate the mutton pieces from its stock which will be used later in the recipe. Next take another pan, put it on medium flame, add the remaining ghee, the spice paste that you had already prepared, add the hung curd, and stir it well with the ghee. Now add the mutton broth or stock and mix it well with the ingredients in the pan, until the gravy thickens. Now add the mutton pieces and mix it well with the gravy and cook it for 5 minutes. For garnishing, sprinkle some curry leaves, and your Mutton Ghee Roast is ready to be served. Enjoy!
Recipe Notes

P.S – If you are calorie conscious and do not want to prepare the entire dish in ghee, you can add some vegetable oil instead. In the ratio – 2tbsp of ghee: 2tbsp of vegetable oil. Results will be equally delicious.
