Sundays are reserved for special meals, when the entire family get together to share, talk, laugh, love and enjoy food that’s both comforting and delicious. So this Sunday I cooked up something for my family that’s wholesome, delicious and most importantly comforting, today’s special comfort food, Mayonnaise Bhetki.
Take the Bhetki fish fillets in a bowl, sprinkle a pinch of salt, half of the pepper powder and lime juice. Mix the ingredients well and leave it to marinate for 1 hour.
Utilize the time to chop the onion, parsley leaves and grate the cheese.
Heat oil in a pan, add the chopped onion and fry it until golden brown, add the garlic paste and stir for a minute before putting of the heat.
Now add the fried garlic and onions in the marinated fish, add the remaining pepper powder, 1tsp butter, a pinch of salt, parsley leaves, olives, green chillies, onion powder, garlic powder, 2tbsp grated cheese, 4tbsp mayonnaise and stir all the ingredients well.
Next take a microwave oven proof bowl, brush the remaining butter and heat the bowl in the microwave for 10 seconds. Take out the bowl of the microwave, carefully place 6 Bhetki fish fillets, add a layer of mayonnaise and sprinkle a layer of grated cheese over it. Now add the remaining six Bhetki fish fillets over it and repeat the layers of mayonnaise and cheese. Now put the bowl back in the microwave and let it cook in the convection mode for 20 minutes.
20 minutes later, take the bowl out of the microwave, sprinkle the remaining grated cheese over it and put the bowl back in the microwave. Turn on the convection mode and cook it for another 10 minutes.
Take the bowl out of the microwave and give it a rest of 10 more minutes. Sprinkle some parsley leaves on top, and your Sunday special Mayonnaise Bhetki is ready to be served hot. Enjoy!
P.S. – I only used processed cheese but you can use a combination of processed and Mozzarella cheese. The result will be equally delicious.
