Carefully wash and dry the laal shag or red spinach, to remove all the mud from the vegetable, before chopping it.
Take a kadhai, add 5tbsp mustard oil and let it heat on medium flame. Add the kaala jeera, red and green chilies and the garlic paste to the kadhai, sauté it for ½ a minute. Now add the chopped onions and mix it well with the remaining spices and let it fry until golden brown.
Now add the chopped laal shag or red spinach to the kadhai, mix it well with all the ingredients, cover the lid and let it cook for 3-4 minutes on medium flame.
Remove the lid, add salt and sugar as per your taste, give it one more good stir and cover the lid, to cook it for 5 to 7 minutes, until the water dries up and the shag is ready.
Remove the lid and serve laal shag with steaming hot rice. Enjoy!
