Gondhoraj Bhetki Strips
Instructions
Preparation
  1. Put chopped ginger, garlic cloves and fresh green chillis on a mixer grinder and grind them to a fine paste. Take the bhetki fillets and cut them into long strips, the same way you would prepare for fish fingers. Put all the bhetki strips on a bowl, add 2tbsp of the ginger, garlic and chilli paste, gondhoraj lemon zest, gondhoraj lemon juice, salt as per taste and 1tsp black pepper.
  2. Use a fork to poke on the fish fillets, so that all the spices seep inside. Now mix the spices well will the bhetki strips and cover the bowl with a lid and let it marinate for at least 30 minutes.

  1. To prepare the batter, take 2 eggs and beat it well in a bowl, add 1tsp black pepper, and a pinch of salt and whisk it again. Add flour to the bowl and mix it well with the egg. Now add cornflower to the same, and whisk it again, unless the batter turns thick. Lastly, you can also add a pinch of baking soda to the batter for the fries to be crispy. But this part is totally optional. Now take the marinated bhetki strips and dip it into the batter, one by one. Add vegetable oil to a Kadai or wok, and let it heat on medium flame. Then use a fork to release the bhakti strips covered in batter, into the oil, one at a time. Fry both sides until golden brown. Your Gondhoraj Bhetki Strips are ready to be served. It is an extremely comforting and easy to prepare recipe for your evening snacks. Enjoy!
