I am a foodie and so for me, less can never be more. Hence while I was thinking of giving my own rendition to our very favourite Fish Fry, I happened to develop my today’s comfort food, Double Decker Cheese Bhetki Fry. And trust me you, with this dish in your plate, less can never be enough. Se, let’s get on with today’s recipe, Double Decker Cheese Bhetki Fry.
Take the Bhetki filets in a bowl, use a fork to create random pierces on the fish, so that all the ingredients added for marination seeps in. Next add a pinch of salt, black pepper powder, lemon juice, ginger, garlic and green chilli paste and mix all the ingredients well with the fish and leave it to marinate for an hour.
Next beat the egg in a separate bowl add a pinch of salt and black pepper powder and beat it again and leave it aside.
Then take all the cheese cubes and cut them in halves, so that they fit well in between the two Bhetki fillets.
Now take a plate add the bread crumbs and spread it out. Next place a cheese cube in between two Bhetki fillets, dub the entire thing in the beaten egg and place it over the bread crumbs. Use the bread crumbs to cover the entire double decker fish fillets and use the palm of both of your hands to give it a round or rectangular shape of your choice. Make sure the cheese cubes do not slip out from between the fillets while you coat it with the bread crumbs; hence use your palms in the process. Repeat the same drill for the remaining fillets. Once all the 4 coated fishes are ready, keep it inside a refrigerator for it to settle down.
Refrigerating it overnight is often advisable or at least 4 to 5 hours.
Take out the refrigerated fish at least ½ hour before you start frying them, so that the fish comes down to room temperature and is cooked well.
Now take a wok, add the vegetable oil and let it heat on medium flame. Now carefully add the coated pieces into the wok, one at a time and fry them until it turns golden brown on each side. Your Double Decker Cheese Bhetki Fry is ready to be served. With each byte savour the juicy fish and creamy cheese, Enjoy!
P.S. – you can use Basa fish instead of Bhetki to prepare the same dish.
