Today I am about to share a recipe that is extremely popular in all Indian households. It is winning combination with rotis or chapatis and regular dish during the winters. Today’s comfort food is, Baingan Ka Bharta.
Brush oil in the eggplant, turn on the flame, and roast the eggplant on medium heat. When done, let it cool before you peel off the burn skin and smash it well to prepare the bharta.
Take a wok, add oil and let it heat. Add the chopped ginger & garlic, sauté it for ½ a minute, then add the chopped onions and chilli and fry it for 1 minute. As the onions turn golden brown, add the chopped tomatoes along with a pinch of salt and fry all the ingredients well for around 1 minute. Now add the smashed eggplant, add a pinch of salt and keep stirring it well, so that all the ingredients mix well with the smashed eggplant. Now turn off the heat, sprinkle the chopped coriander and serve it hot. Your Baingan Ka Bharta is ready. Enjoy!!!
P.S. – Remember to avoid any lumps while you smash the eggplant for better taste.
