Cheese Ball
New Year is all about starting a fresh, looking forward, mending old ties, and spreading love, far and wide. And what better way to spread love, than with food! So this New Year thecomfortfoods.com decided to unfold the yearly menu with an ingredient that melts heart and spreads smile, cheese! So my first comfort food for the year is Cheese ball.

Preparation

 Take 4 medium sized potatoes and boil them until soft. Next peal of the boiled potatoes, and smash them into a fine paste with no lumps. Now take a bowl, add the smashed potatoes, 50gm sweet corn, salt as per taste, 50gm finely grated cheddar cheese, 2tbsp coriander powder, ¾ tsp chilli flakes, finely chopped coriander leaves, ¼ tsp black pepper powder, ½ tsp dried oregano and 2tbsp corn flour. Now mix all the ingredients together. Next take about 1tbsp of the potato mixture shape it into a ball and flatten it out, put a cube of cheddar cheese in between the flatten potato mixture and carefully close it up and again round it up into a ball. Repeat the process for the remaining potato mixture.

 Now for the batter, take a bowl, add 2tbsp of cornflour, 2tbsp of all-purpose flour and 1/3 cup water or more if required to prepare a smooth batter. Take another bowl for the breadcrumbs. Next take one potato ball at a time, dip it into the batter and place it in the bowl of breadcrumbs. Cover all the sides of the ball with the breadcrumbs and keep it aside. Repeat the process for the remaining potato balls.

 Refrigerate the potato balls covered in breadcrumbs for an hour before frying them.

 

Direction

 Take a frying pot and heat the oil, now carefully place the potato balls in the oil and fry it until golden brown in medium flame. Your Potato Cheese Balls are ready to be served. And from all of us at thecomfortfoods.com, wish you all a very happy New Year, so keep smiling and say “cheese”!
